All Was Bright – Merlot Barrel-Aged Belgian Dubbel

This is the 2nd barrel-aged offering from our Belgian Dubbel collab with Cartel Brewing. This beer was aged in a Waltz Vineyards Merlot barrel that was then filled with Thistle Finch Distillery Rye Whiskey for 10 months. This barrel had some wild Brettanomyces present and resulted in a bit of re-fermentation and a brighter, dryer, more fruity beer. The Belgian esters are almost gone and the Brett is really singing. Super different from the Bourbon barrel version.
